This month's Cheese Club Offer.

Raw Milk C2 This is our most pure expression of our cheesemaking and agriculture. Raw milk, straight  from our rare breed herd, brings complexity to this cheese. These wheels are from December 2018. Flavour: Intensely savoury, lingering umami flavours. Earthy, broth, slightly smoky. C2 tends to be sweeter and more nutty through the summer months. The texture is semi-hard but still with plenty of moisture and just starting to exhibit a bit of crystalline texture due to the age.

Spring Saint In the central plateau of France there are a number of cheeses that are all named after the local Saints. Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent. Flavour in Spring: As the cows begin to calve, the first Saint of the season has a dense interior, oozing as it reaches the rind. Dominant butter and mushroom flavours, with lighter grass and floral notes when young.

O.D.O It stands for One Day Old and that’s what it is; a simple, fresh cheese that relies inherently on the quality of our milk to deliver its flavour. O.D.O. is marinated in olive oil with fresh garlic and herbs. Eat it on good bread with olive oil, crumble it through hot pasta or grill it on a pizza. It has a relatively low salt content and a strong lactic acid flavour which adds a lovely tartness.

The Bastard Semi-hard, natural rind, cow and sheep milk When nineteenth century English poet Robert William Service asked “What care I who your father was (T’was better no to know)” he was probably not talking about cheese - although he did spend his youth working as a “cow juice jerker”. Our Bastard also has slightly dubious parentage—made from a mixture of cow & sheep milk. This sort of thing was done all the time in the old world—most cheesemakers had a couple of cows, a few sheep and half dozen goats so all the milk was thrown in together. The result is a deliciously pale natural rind cheese. The flavour is a delicate and sweet and an interesting contrast to Tom. A great wine cheese that will compliment rather than overpower.

Waverley Mills Recycled Wool Travel Rug

Our Mates up in Launceston at Waverly Wool Mill have a great new travel rug made from our recycled wool fibre. The recycle fibre is made up of merino wool shearing waste, unused wool fibre, off-cuts and older blankets shredded, spun and blended together to make our recycled yarn. This yarn is then dyed and woven into the Black watch tartan. The colour specks in the yarn is from the recycled parts. After the throw is woven, we brush the fibre to give it an even softer feel to the skin. This rug is Machine Washable. (150x172)

Tasmanian Butter Co. Cultured Butter

Cultured Tasmanian butter: it doesn't get much better than this! It’s creamy, with lashings of Tasmanian sea salt, and so full of flavour. It is lovingly made by Olivia Morrison in Launceston, and over the past three years Tasmanian Butter Co. has earned a solid following, from patrons of local farmer's markets to French chefs: Alain Passard last year described Olivia's product as "the best salted cultured butter in the world". Cultured butter has a higher fat content which makes it better for frying, and its natural acidity makes baked goods lighter and fluffier. Most important of all though, it just tastes great! Freya's Delights Caramel Sauce

We love Dulce De Leche, what could be better than milk cooked with sugar and caramalised to make a creamy, thick, caramel sauce! We stumbled across this jar a few weeks back and needless to say it didn't last long. This is made by a young Tasmanian called Freya who is just 13 years old! Freya started her own business recently and launched Freya's Delights with this amazing caramel sauce. If this is anything to go by, Freya will be a huge success! Our Wood-fired Dukkah

Our dukkah is a rich combination of spices, ground nuts and seeds (with a touch of Tasman Sea Salt for good measure). It is toasted in the wood-fired oven to bring out the flavour of each of the ingredients. It’s also great rubbed into the skin of a roast chicken or as a crust for fish.... Coronea Grove seasoned Pumpkin Seeds

Lauriston Grove Olive Oil "Hardy Green"

We offered you guys this Olive Oil from Southern Tasmanian last year and the response was great! This cold pressed Oil is made with something we have not seen before in olive oil " Hardy Green Mammoth Olives". The olive grove owned by Marco and Vicki Linardi, is on the South Arm peninsular in Southern Tasmanian and has a beautiful outlook over the coastline. The climate here is so similar to the mediterranean climate and is well known for producing some of the best cold pressed olive oil, this olive grove was planted late last century and is thriving! Bruny Island Cheese Co. Kasundi

Rich, aromatic, unctuous tomato relish of Indian origin - we kind of use the traditional recipe passed down and changed slightly as it has move through the family, mine (this recipe) is not as spicy or hot as other kasundi but there is still loads of flavour there which will complement you food rather than dominate it. Oen

milk: cow type: soft, pinot-washed in vine leaves

OEN (from the word oenology) is a true labour of love - a washed-rind, cow’s milk cheese, washed in Pinot Noir before being wrapped in vine leaves to be carefully matured. The vine leaves protect the cheese and create a moist surface which encourages the flavour development. When mature, OEN’s rind becomes pungent and the texture becomes soft and fudgey.

milk: cow type: soft, washed rind on huon pine

1792 - It was the year the French first set foot on Tasmanian soil and this very French, very pungent little cheese, matured on aromatic Huon Pine boards, celebrates what could have been. It is made in the traditional method – its pinky-orange rind the result of being regularly hand-washed in brine, encouraging the surface bacteria that give this cheese its complex flavour and aroma. Great with cider, ale or a meaty pinot.

This cheese celebrates two of Italy’s most ancient of gastronomic cornerstones – cheese and cured pork. It is a simple fresh cheese wrapped in locally made Prosciutto. After baking in a hot oven for 15 minutes, serve with some good bread, a simple salad and a glass of wine. Really, when you think about it, could there be anything better than hot, crispy prosciutto and gooey, melted cheese? No, there couldn't.

Whole wheel of Tom

What would be better than a whole wheel of Tom? These are approximately 1.2kgs in weight and have been aged for around 4 months, which I reckon is the perfect age for our small wheels of Tom. They have awesome flavour – buttery and savoury with some great developed characters. Enjoy it straight away or age it for a few more months to concentrate the flavours.

Frogs

Double India Pale Ale

Frogs is our annual, extra hoppy double IPA, named in honour of the noisy residents of our tea tree swamp. This year’s Frogs has been made entirely with Tasmanian grown and malted barley, and hopped exclusively with Tasmanian Galaxy. Dry hopping three times at specific points of yeast activity and temperature has built a striking depth of flavour and aroma encompassing passionfruit, strawberry, grapefruit, mango and apricot.

Frogs goes really well with Tom, our semi-hard, savoury cow's milk cheese.

Our limited release dark ale ‘Bruny Black’ is an easy drinking companion for winter weather, warm fires and hearty meals.

Pouring a reddish-tinged black, this beer offers ample malt-driven flavours of freshly roasted coffee, toffee, and toast intertwined with citrus, spice, and plum notes from Tasmanian-grown Cascade and Ella hops. A robust bitterness emerges late, lingering along with a drying note of roasted barley, making for a complex, yet superbly quaffable drink.

Lighthouse Ale is named after the famous Cape Bruny Lighthouse, which has stood on the edge of the wild Southern Ocean since 1838. Chewy, biscuity malt flavours are balanced by firm bitterness, while late kettle additions of three Tasmanian aromatic hop varieties – Galaxy, Willamette and Cascade - deliver subtle fruity and floral notes.

‘The Long Paddock’ uses barley, wheat, oats and hops grown on Tasmanian farms, and is fermented with a Belgian saison yeast. It pours golden with a large white head of foam, and the high carbonation helps accentuates aromas of honeyed pear, citrus, cedar and clove. Sweet cereal notes mingle with fruit and spice flavours, with a moderate bitterness against a very dry finish.

Gourmet Farmer Goes Fishing
