The Bruny Island Cheese Box
This box features four all-time Bruny Island Cheese Co' favourites, for a perfectly balanced Cheese Box to enjoy, whatever the occasion! **Bella** 200g Named after our favourite cow, Bella is slightly sweeter and moister than Tom. It also has a slightly trickier rind, which is developed through regular wiping to encourage the surface bacteria to flourish. A new beautiful, semi-hard cow's milk cheese developed by our Head Cheesemaker Luke Jackson, that is quickly growing a huge fan club. **Saint** 190g Saint is a cheese that we quickly run out of, on the island, and online. Not all white mould cheeses are called brie or camembert. Our Saint is a complex, richly flavoured soft cheese that reflects the seasonal changes on our farm more than any of our cheeses. Firm and deliciously lactic tasting when young, it softens and becomes stronger and more pungent as it matures - eat it fresh when it arrives, or if you prefer your cheeses on the stronger side - allow it to ripen with time. **Our Bread & Butter Pickles** 270g This is one of my all-time favourite pickles. I love it with everything, especially hard cheese and in gourmet toasties! Great with cold cuts too. Try it with some of the Meander Valley fetta smushed into a bagel or some sourdough! O.D.O. is marinated in olive oil with fresh garlic and herbs. Eat it on good bread with olive oil, crumble it through hot pasta or grill it on a pizza. It has a relatively low salt content and a strong lactic acid flavour which adds a lovely tartness. **Our Tasmanian Raspberry Jam 270g** You guys seem to be as obsessed with raspberry jam as we are … It is a staple in our house, so we started making it occasionally and when we did you went nuts for it. Now it has a permanent place in our range. Tasmanian summer on a spoon, delicious any time of the year, especially on Huon Valley Crumpets! **Our Woodfired Oven Muesli 600g** This is different from our Granola in that it contains fruit and nuts (and not quite so sweet). Smoked bacon from our very own old breed pigs (Wessex Saddlebacks and Berkshires) - these typically take longer to mature so get extra flavour! Saffron Gnocchetti Sardi 500g
Last year our mate Matt Rao got a new pasta drier sent over from Italy in the middle of a global pandemic. He makes fresh pasta everyday and then dries it for 14 hours to trap the flavour in. It is fair to say I have never met anyone more passionate about pasta than Matt. This is the first of Matt's dried pastas to roll off the line. It is a traditional pasta from his home island of Sardinia. Gnochetti Sardi is the universal pasta of Sardinia because it goes with anything. Made from local semolina and flavoured with saffron, Matt says that traditionally it would be served with goat ragu, olive oil and seafood or a light cheese sauce. It has a long cooking time of 8-10 minutes (use lots of salt in the water). Serve it with cheese sauce and lots of chopped fresh parsley.

Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind – not a thick carpet of single strain white mould found on more commercial cheeses. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent.

Bruny Island Olives 280g
It is a real treat to be able to offer you these olives, we get enough to be able to offer them so rarely! They are grown about five hundred meters behind the cheesery by Owen and Dianne Carrington-Smith who painstakingly pick them by hand and pickle the fruit from each tree separately. They are steadfast in their dedication to preserving olives by natural, slow fermentation, where most mass-produced olives are preserved using chemicals to speed up the process. They are truly some of the best olives we have eaten anywhere in the world.

Annie is one of the stalwarts in the local artisan scene and has been growing, picking and processing elder flowers for the past decade. The elder tree is steeped in folklore, history and superstition. The Druids thought of it as the tree of superstition, the White Goddess, who guarded the door to the underworld. The wood of Christ’s cross was said to have been made from the elder. The Anglo-Saxons thought that elders represented both good and evil – if you cut an elder down, a witch would manifest in its place, yet you'd also find them planted near wells and at the door of newly weds to keep witches at bay. If you fell asleep under the heavy scent of an elder in full bloom, you would be carried off to the world of the fairies and be protected from snakes and evil spirits. Elder flower has a unique and delicate flavour with nuances of a sparkling wine, a mild ginger beer, lychees, lemons and cider. This concentrate is great as a mixer, as a long cold drink, or at the time of year, served hot with a slice of lemon.
