This month's Cheese Club Offer has some really interesting cheeses. Firstly, we are still seeing incredible funky oozy soft cheeses like the Saint in this offer, and Oen makes a return! We also have a new cheese for you, Cheese Club Family! It is a version of our semi hard cheese Tom, the difference is we've washed and treated it in our Farm Ale Beer, giving it a really interesting yeasty over tone to the cheese. Also in this Cheese Club is everyone's favourite, Raw Milk C2, and our condiment this month is a really simple tomato relish, made with the last of this season tomatoes, perfect with every cheese in this months Cheese Club Offer.

Saint The effect of late summer on our farm are really evident in the texture and flavour of our soft cheese right now. The higher than normal butterfats and proteins in the milk have had an incredible effect on this batch of Saint. It will have a ripe and oozy texture and the flavour will be rich and more pungent from the different feed.

OEN (from the word Oenology, meaning the study of wine) is a product of my two favourite things - soft, cow's milk, washed rind cheese and Tasmanian Pinot Noir. We have washed this cheese in last year’s vintage Pinot Noir before carefully wrapping the cheese in vine leaves to mature for 5-6 weeks. The vine leaves protect the cheese and create a micro-environment on the rind which encourages intense bacteriological activity on the cheese's surface. When mature, OEN's rind becomes pungent and the texture becomes soft and fudgy - a lovely stinky little number - you'll love it!

Beer Washed Tom This new cheese, created by our Head Cheesemaker Luke, is part of a development program of new cheeses which we will only make at certain times of the year in order to truly reflect the seasonal attributes of our milk. This is a washed curd cheese, which means a portion of the whey has been removed and replaced with warm water. This 'washes' away some of the lactose and results in a very supple textured semi-hard cheese. The rind has also been treated with our Farm Ale, which contributes a yeasty tang to the curd. We are really pleased with cheese and look forward to it becoming a yearly make.

Raw Milk C2 I often get asked which is the favourite of all our cheeses. Truth is, I don't have one, but if you asked me which cheese I am most proud of, then this would be it. One of Australia's only raw milk cheeses, no cheese in our lineup better reflects the nature of our farm, or the philosophy behind our cheesemaking. This batch is almost 7 months old and is showing fantastic depth of flavour and incredible length.

Accompaniment The bakery team have whipped up a really simple tomato chutney made with the last of the tomatoes from this season.

This month's Beer Offer showcases our two brand new limited release beers: Bruny Black and 2019 Fresh Hop Harvest Ale. These two are great examples of our approach to brewing. Bruny Black, an aromatic dark ale, arrives just as the cold weather in the southern states is starting to bite, and is designed for sessionable winter drinking when you don't feel like something as heavy as a stout. Our 2019 Fresh Hop Harvest Ale is a strong pale ale brewed in March with fresh Cascade hop cones grown a mere 70km from the brewery. Fresh hop beers can only be made for a few weeks each year, during the annual harvest, and the difference in the final product compared with using processed hops is a 'fresh' pungency and greater depth of flavour - a bit like using freshly picked herbs in cooking rather than dried. This year's Fresh Hop Harvest Ale is drinking at its best right now, with zesty, floral hop aromas built on top of a robust, biscuity, all-Tasmanian malt base.

Woodfired sourdough pizza base

If you have been to our Cellar Door on Bruny Island you will know that we make great pizzas. We use a sourdough starter and a slow fermentation to make these bases. They are finished with our own recipe tomato sauce and our cheese before being baked in the woodfired oven. All you need to do is add your favourite toppings and pop it back in the oven for 15 minutes.

Our Wood-fired Dukkah

Our dukkah is a rich combination of spices, ground nuts and seeds (with a touch of tasman sea salt for good measure). It is toasted in the wood-fired oven to bring out the flavour of each of the ingredients. It’s also great rubbed into the skin of a roast chicken or as a crust for fish.... Avo and toast is also a great friend of dukkah, as is Olive Oil and Hot Sauce!

Woodfired baked Quinces

Quinces are everywhere in Tasmania at the moment and the aroma coming from these in the wood-fired oven is making us delirious! These were grown in Richmond by Sally and Chris (the wonderful folk who grow your delicious cherries in Christmas). We’ve spiced them with cinnamon and star anise then coated them with a moreish, sweet syrup. A perfect dessert served warmed with some fresh cream, over ice cream or maybe even twist up a martini!

Bruny Island Olives

It is a real treat to be able to offer you these olives. They are grown about five hundred metres behind the cheesery by Owen and Dianne Carrington-Smith who painstakingly pick, pickle the fruit from each tree separately and are steadfast in their dedication to preserving olives by natural, slow fermentation (most mass-produced olives are preserved using chemicals to speed up the process). They are truly some of the best olives we have eaten anywhere in the world. The variety of olives we have on Offer for you at the moment is Manzanillo - green / brown, round and packed with nutty flavour. Lauriston Grove Olive Oil (Frantoio)

We offered you guys this Olive Oil from Southern Tasmanian last year and the response was great! This cold pressed Oil is made with Frantolo olives. The olive grove owned by Marco and Vicki Linardi, is on the South Arm peninsular in Southern Tasmanian and has a beautiful outlook over the coastline. The climate here is so similar to the mediterranean climate and is well known for producing some of the best cold pressed olive oil, this olive grove was planted late last century and is thriving! Our Double Smoked Nitrate free Bacon

When making our bacon our first criteria was of course old breed pigs (Wessex Saddlebacks, Tamworths and Berkshires) - these typically take longer to mature so get extra flavour! Saint

milk: cow type: soft, white mould

In the central plateau of France there are a number of cheeses that are all named after the local Saints. Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind – not a thick carpet of single strain white mould found on more commercial cheeses. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent.

1792 - It was the year the French first set foot on Tasmanian soil and this very French, very pungent little cheese, matured on aromatic Huon Pine boards, celebrates what could have been. It is made in the traditional method – its pinky-orange rind the result of being regularly hand-washed in brine, encouraging the surface bacteria that give this cheese its complex flavour and aroma. Great with cider, ale or a meaty pinot.

This cheese celebrates two of Italy’s most ancient of gastronomic cornerstones – cheese and cured pork. It is a simple fresh cheese wrapped in locally made Prosciutto. After baking in a hot oven for 15 minutes, serve with some good bread, a simple salad and a glass of wine. Really, when you think about it, could there be anything better than hot, crispy prosciutto and gooey, melted cheese? No, there couldn't.

What would be better than a whole wheel of Tom? These are approximately 1.2kgs in weight and have been aged for around 4 months, which I reckon is the perfect age for our small wheels of Tom. Farm Ale is a unique pale ale made with barley, wheat, oats and hops from Tasmanian farms. Our flagship session ale is hazy golden, with a smooth bitterness and fruity hop aroma balanced by earthy cereal sweetness.

Farm Ale pairs particularly well with pungent washed rind cheeses, such as our 1792.

Pouring a reddish-tinged black, this beer offers ample malt-driven flavours of freshly roasted coffee, toffee, and toast intertwined with citrus, spice, and plum notes from Tasmanian-grown Cascade and Ella hops. Metric Stout is our annual limited release post-imperial stout. It is jet black and viscous, with rich malty aromas hinting of raisins, chocolate, ristretto and campfire ash mingling with an edge of citrusy Cascade and woody Willamette hops.

Intense mocha, roast malt, caramelised fig and dark fruit flavours coat the mouth, balanced by a hop bitterness that is firm while young and will gently fade with time.

2018 Metric Stout comes in a corked, 750mL bottle and will benefit from careful cellaring (in the same manner as red wine) for several years.

‘The Long Paddock’ uses barley, wheat, oats and hops grown on Tasmanian farms, and is fermented with a Belgian saison yeast. It pours golden with a large white head of foam, and the high carbonation helps accentuates aromas of honeyed pear, citrus, cedar and clove. Sweet cereal notes mingle with fruit and spice flavours, with a moderate bitterness against a very dry finish.

The Long Paddock is sublime enjoyed alongside Otto, our fresh, prosciutto-wrapped cow's milk cheese, baked and served hot with fresh crusty bread.
