This month's Cheese Club Offer is a celebration of Dad's.

Tom - Tom is not complicated by tricky cheese making or complex maturation techniques – a cheese of simple integrity to be left on the table and eaten everyday. On the outside he has a natural rind that develops over three to five months of ageing. On the inside, he is really just great milk, closely reflecting what the cows are eating day to day. Butter, green grass, slightly nutty flavours and creamy smooth texture.

George - This batch is was made back in Nov/ Dec and is looking fantastic. His deeply satisfying flavour and texture will appeal to lovers of hard and characterful cheese and is ideal for this time of year. It is rich, grassy and buttery, and has been maturing quietly according to the whims of our unique community of microflora (and cheese makers) since December last year.

Marc - Marc is the fancy name for the grapes after you have fermented and pressed them to make wine. Basically they are just skins and seeds but still have heaps of great flavour and aroma. We only make this cheese once a year during vintage and this year we have used pinot noir marc from Nick and Jeremy Dineens own wine. We press it onto the rind and put it back on the shelf to mature. Turning and rubbing this cheese is a messy job as some of the marc falls off every time you touch it. The result from this labour of love is a wonderfully aromatic cheese with a complex, savoury fruit flavour and a wine aroma.

O.D.O - We are calling it the Winter addition because we have used the award winning smoked paprika from our friends at Weston Farms and infused it in local olive oil with a bit of local garlic. Simple, fresh cheese that relies inherently on the quality of our milk to deliver its flavour with an added earthy richness from this incredible locally grown paprika and garlic.

Pickled Onion Relish - I love this - it has the savoury flavour of slow cooked onions and the sweetness of the pickling liquor. It is the perfect accompaniment to the hard and strong cheeses in this Offer.

Spring 2018 Raw Milk C2

milk: cow type: raw milk, semi-hard, natural rind, 9 months old

These special wheels of C2 were made back in late November and early December last year, at the height of Spring. That's right in the middle of the flowering period for our pasture. When the soil starts to warm up in early November it triggers flowering and gives the pasture a tremendous boost in growth - Richard jokes that you can pull up a chair and watch it grow! This results in much more intense flavours for the milk, and of course, the cheese! Raw Milk C2 made during these weeks are definitely our favourites and I reckon are the best reflection of what we look for from this cheese. They get very close attention in the maturation rooms as well, so that they develop a rich rind that adds to their complexity. As a result these wheels are both fruity and savoury at the same time with incredible depth of flavour which seem to just go on forever. Don't miss this gold medal winning cheese!

January 2019 George

milk: cow type: semi-hard, natural rind, 8 months old

George is our big, beautiful, slow-maturing cheese. These very special wheels were made in January, after we had bushfires threatening the farm. You might remember that because we had to move our irrigator off the pasture to use it to protect our herd and building, the pasture pretty much died in the hot winds. So we ended up feeding out huge quantities of our hay and silage to get the girls milking. This is reflected in these cheeses – insanely robust flavour and complexity, more typical of winter milk cheeses. The texture is firm and a bit crumbly. This was the a huge hit at last week's Mould Festival in Melbourne. If you love a really good cheddar, then this is the cheese for you!

We are cutting these wheels into 1kg wedges - if you want a bigger wedge than that just let us know.

April 2019 Tom, half wheel

Tom is everyone's favourite cheese. These wheels were made in April when the cows were back on Autumn grass after the intense bush fires we had locally. They are superbly flavoured – savoury, grassy and with a fine, lactic finish. I really love this cheese. Tom is a shorter ageing cheese because it is smaller - the result is well developed characteristics  on the palate but with a moist, vigorous texture.

These wheels are all around 1kg in weight and we are selling them as half wheels (500g) - if you want a whole wheel just let us know.

Our Oxymoron Sausages

During the past year or so we have offered you Cheese Club members a number of different seasonal sausages made with our very own pork. Our rare breed pigs have a great life foraging and free ranging on our farm. They are fed on milk and whey from the cheesery as well as spent grain, hops and yeast from the brewery. This top quality meat is brought together with other local ingredients by our butcher, who has been making sausages for 50 years. These bangers are robustly flavoured and dark from the inclusion of our Oxymoron 'dark pale' ale. The root of the recipe comes from my good mate Ross O'Meara, who made a similar sausage when we produced the Gourmet Farmer Deli Book. Our sausages have no preservatives at all. We're sending them to you frozen so you have a few days to eat them - if it takes that long!

Madras Curry Paste by T & D

Tom started making his curry paste in 2015 when he was 9 years old (he is now 11 years old); he has a passion for curry paste and business. Dad helps him do the hot part and makes sure it is all done properly. Tom works hard and has learnt a lot about measuring, weighing, labelling, getting a kitchen license and council notifications. In 2017, at the Hobart Fine Food Awards, he won Gold for his Balti Masala Paste and Silver for his Green Masala paste, but in our house, we have a bit of a thing for his Madras Paste cooked up in breakfast beans…. yummo!

Moonshine by Taylor and Smith

"The Moonshine is essentially a barley vodka that is so called because we make it at night in the back shed".It is much more premium than its name suggests. Taylor and Smith use only Tasmanian malted barley that then mill slowly; mash with Mt Field snowmelt; ferment with an unusual yeast - the yeast used give a much greater flavour profile to the spirit. Then double distill in our small copper pot still - which is direct fired. The resulting spirit carries through a sweetness like molasses that hints at green apple with subtle reminding wisp of floral and citrus. Dean Jackson whisky revealed that our Moonshine carried lasting flavours of "rich stewed apple, cherry, honey, toffee and a good strong backbone of malty biscuity tones". " Complex, easy drinking, evolving and harmonious"..... For the Dad that have everything!

Tasmanian Smoked Paprika by Weston Farm

What??? Tasmanian grown paprika? Are you crazy? Nope, dead serious. This is incredible and is what we have used in this month's O.D.O. we think you are going to love it as much as us. It makes you realise how old and tired that jar of paprika in your cupboard is. Grown by Richard Weston at Weston Farm, this paprika was grown, dried and ground by hand. The aroma is so intense. But there is really not much point in raving about it because the entire crop adds up to about a dozen small jars. And we bought all of them, so it will sell out super-fast (if not already). This is the sweet variety and is aromatic and almost smokey smelling - great for Spanish food.

Dead Horse - Tomato Sauce

You might know it better as Tomato Sauce but for as long as I remember it has always been ‘Dead Horse’ in my family. This recipe comes from my great grandfather’s cookbook, written in perfect copperplate, and was made every year by my Mum. The production would start with a pilgrimage to Greek friends who were market gardeners on the Murray River. We would come home with a boot-load of ripe tomatoes (and the best watermelons I have ever tasted). Mum would get to work, chopping, boiling, sieving and bottling, and the house would reek of sauce for days. Now this falls to her kids and every year we get together and go through the whole production. I hope you enjoy this piece of my childhood.

This is the first salt to be harvested in Tasmania in over 160 years. And it’s been worth the wait. The seas around Tasmania are some of the cleanest and nutrient-rich waters in the world and it’s this unique combination which gives these salt flakes their incredible depth of flavour. Saint

milk: cow type: soft, white mould

In the central plateau of France there are a number of cheeses that are all named after the local Saints. Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind – not a thick carpet of single strain white mould found on more commercial cheeses. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent.

Oen

milk: cow type: soft, pinot-washed in vine leaves

OEN (from the word oenology) is a true labour of love - a washed-rind, cow’s milk cheese, washed in Pinot Noir before being wrapped in vine leaves to be carefully matured. The vine leaves protect the cheese and create a moist surface which encourages the flavour development. When mature, OEN’s rind becomes pungent and the texture becomes soft and fudgey.

1792 - It was the year the French first set foot on Tasmanian soil and this very French, very pungent little cheese, matured on aromatic Huon Pine boards, celebrates what could have been. It is made in the traditional method – its pinky-orange rind the result of being regularly hand-washed in brine, encouraging the surface bacteria that give this cheese its complex flavour and aroma. Great with cider, ale or a meaty pinot.

This cheese celebrates two of Italy’s most ancient of gastronomic cornerstones – cheese and cured pork. It is a simple fresh cheese wrapped in locally made Prosciutto. Whole wheel of Tom

What would be better than a whole wheel of Tom? These are approximately 1.2kgs in weight and have been aged for around 4 months, which I reckon is the perfect age for our small wheels of Tom. They have awesome flavour – buttery and savoury with some great developed characters. Enjoy it straight away or age it for a few more months to concentrate the flavours.

Hand-picked, 50% whole bunch fermented, wild yeast, unfined and unfiltered.

Low crops from silica quartz soil produce intense dark cherry and wild red fruit aromas, with spice and herb characters coming from the whole bunch fermentation. Intricate red fruit and spice flavours flourish in a rich palate with savoury finish and fine, grainy tannins. Powerful yet subtle, evocative, generous, layered and structured.

100% Hand-picked Pinot Noir from the white gravel soils of the Yorktown Vineyard. Wild yeast fermentation begins in tank and completes in the bottle with no dosage. The wine is sealed while completing fermentation and will contain yeast sediment. The oldest and most fraught way to make sparkling wine. Only 675 bottles produced. Wild, complex and not for everyone.
