The Christmas Cheese Offer 4 * 200g
The Christmas Cheese Club Offer. **Tom** Tom is a pretty simple guy. Not complicated by tricky cheese making or complex maturation techniques – he’s a cheese of pure integrity, the kind you leave on the table and nibble at through the day. On the outside he has a dry, natural rind that is developed over a few months of ageing. On the inside, he is really just great milk, reflecting what the cows are eating through the seasons. He gets along famously with everyone. Tom likes being rubbed. Flavour: Butter, green grass, slightly nutty, clean lactic finish Texture: Ranging from creamy smooth to slightly crumbly as its ages **Summer Saint** In the central plateau of France there are a number of cheeses that are all named after the local Saints. Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent. Summer: The cows begin grazing a new flush of grass chock-full of flowering clover, chicory, and plantain. As they reach the height of their lactation, the butterfat content begins to lessen while the protein increases. Summer saint has a more delicate, rounded flavour and at around 6 weeks should be oozingly ripe. Think cream, fresh grass and slightly mushroom as its ages. This is Saint at its peak. **O.D.O.** It stands for One Day Old and that’s what it is; a simple, fresh cheese that relies inherently on the quality of our milk to deliver its flavour. O.D.O. is marinated in olive oil with fresh garlic and herbs. Eat it on good bread with olive oil, crumble it through hot pasta or grill it on a pizza. It has a relatively low salt content and a strong lactic acid flavour which adds a lovely tartness. **Raw Milk C2** Raw Milk C2 is our most pure expression of traditional cheesemaking. Fresh raw milk from our rare breed dairy herd brings uniquely complex flavours to C2. These flavours change gradually from summer through to winter as our cows graze their way through the amazing pasture, hay and sileage we produce on our Glen Huon dairy farm. From smoky and meaty during Autumn and Winter to Spring and Summer floral and nutty notes. C2 matures for 6-12 months. Flavour: Intensely savoury, lingering umami flavours. Earthy, broth, slight smoke, can be nutty when younger. Tends to be sweeter and more, nutty over the Summer months. Texture: supple through to hard and crystalline as the age increases. **Biscuits** Over the years we have had so much lovely feedback from you, our Cheese Club members, but one of the things you all seem to get upset about is you want to tuck in straight away and we don't give you biscuits. Our Woodfired Stollen 500g
So this year our bake team have gone back to the original "Nicks Favourite" recipe...... If you thought our wood-fired stollen could not get any better then WAIT till you try this one. Vik and the team have been hard at work perfecting the recipe (we have done a lot of quality control testing) It's rich in spice, dense with marzipan, almonds, fruit and peel. We are really proud of this wood fired stollen and hope you enjoy it as much as we have! Brewer's Reserve Whey Stout 750ml
Whisky barrel aged Whey Stout 9.5% a/v Back in the year 2000 an ex-bourbon barrel was filled with new make spirit at Tasmania Distillery. Ten years later, a young man at Lark Distillery helped bottle this single malt whisky for independent bottler ‘Trapper’s Hut’. He was also commissioned to brew and distill 200 litres of single malt spirit to refill the same barrel. In 2018, Trapper’s Hut bottled this whisky and, serendipitously, the empty barrel was offered to our Head Brewer Evan Hunter. After recognising his own handwriting from 2010 on the warped heads of the dusty old cask, Evan and the brewing team filled it yet again - but this time, with Whey Stout. Only 100 of 235 corked, large format bottles are available on this Cheese Club Offer, with the remainder available exclusively through our cellar door. We’ve also managed to secure six bottles of the ‘Trapper’s Hut’ whisky that came out of this barrel – check out the Brewer’s Reserve Ultimate Beer and Whisky Pack for more information!

Our Farm Beef and Sage Sausages 500g
Rich is pretty happy with these and so are our customers. Judging from the response at the local Willie Smith's and Farm-gate Markets in Hobart. These sausages are made from our own organically farmed beef from the dairy farm. The ingredients are simple, all we have added is a touch of salt and pepper and a few bunches of sage. We might have to sign Richard up for a new profession of butchery and sausage maker as well as world famous organic dairy farmer. Well done, keep up the great work.

We just can't get enough of what the team at Waverley Mills do! They have been making Tasmanian merino wool blankets and throws for over 150 years in Launceston and they truly are a beautiful product. This Christmas we’ve chosen something really different, it is a throw made with recycled denim jeans. The texture of this throw is amazing and the colour is great. Each come slightly different depending on the darkness of the denim in the stitch. It is incredible to think that we can up cycle just about anything to make such beautiful and useful products like this. After six months of maturation, the beer was bottled at 9.5% a/v. For the first time ever in Australia - we think - you have the opportunity to experience a barrel matured beer paired with the whisky that came out of the barrel, with both products made by the same person. We have just six of these magnificent bundles available: a 750mL bottle of Brewer's Reserve Whey Stout, a 500mL bottle of Trapper's Hut whisky, a wheel of Saint, plus a guided brewery tour and beer and cheese tasting at our cellar door with Head Brewer Evan Hunter*. The bottles of stout are hand-numbered one to six (first order gets bottle #1, and so on), and are suitable to cellar for many years. Tasman's Harvest Pickled Peaches 300g
I have been waiting for these to come back for a while now, they are based on a recipe from Ann Kile (I miss her) and now made by the wonderful Alison Hookey. These peaches are first dried (because the flavour is more intense). They are then simmered in a fragrant sugar syrup with whole spices. They are perfect with strong cheese (like the Oen) or cold meats (like our sausages) or add them to a lamb tagine, flavour a slow-cooked braise, or pepper them through cous cous. This sweet and tangy spread has a little kick to it, it pairs with your Christmas ham (ours if you get in quick) and pork. Try roasting a wheel of cheese and then add the peaches to give a real lusciousness to your cheese.... Welcome back!

I've loved the Panforte we made in our wood fired oven for a while, but the problem is it requires a cool oven and our oven rarely gets cool enough to make it. My sister makes the best Panforte in the world and this is her recipe (more or less). At a staff meeting last week, I handed a bowl of it around to taste-test. It was so good we all lost focus and started talking about Panforte instead! I love how dark and mysterious it is – full of nuts, fruit, cocoa and spice. We are getting quite well known for offering these delicious cherries grown in the Huon Valley, they are from an orchard that was planted in the 1950s by the Wolf brothers and somehow survived when all the others were ripped out. I am pretty sure that this orchard of Kentish cherry trees is the last commercial planting left in Australia (I'm happy to be corrected). They are a sour cherry, closely related to the more common morel variety but not nearly as dark and less fleshy. They originate in eastern Europe but became popular in England. They are preserved for us by Alison Hookey in a lightly spiced, sweet vinegar. Their colour is wonderfully ruby red and these little beauties are beautiful with strong cheeses or as an accompaniment to Ross's Rilettes!

Coaldale Pickled Walnuts 350g
Since moving to Tassie I have fallen in love with pickled walnuts. I think I had them when I was a kid and remember them as just tasting like vinegar. These are totally different - deeply spiced and wonderfully savoury, they make a great accompaniment to cheese. These walnuts are grown in the Coal Valley east of Hobart and are picked while the nut is still green, but before the hard shell has formed - usually in the week after Christmas. The complex pickling process takes about six weeks.

Oatmeal export stout 5.7% a/v For decades prior to the blossoming of modern independent breweries, there was little choice in Australia when it came to beer. ‘Export stout’ became the go-to style for discerning (or simply old-fashioned) imbibers who craved a beer more complex than the local brand of pale lager. The surviving export stouts produced by Australia’s large breweries are striking relics of the 19th century, kept alive by loyal drinkers who appreciate their pronounced roasted flavour, strong bitterness, malty body and higher alcohol content. Mainlander is hugely roasty, with undertones of molasses, liquorice and dark fruits. Several months of maturation prior to release have taken the sharp edges off a big hop bitterness, and we’ve broken with tradition to include organic Tasmanian oats in the recipe – they enhance smoothness and viscosity. Brewer's Reserve Whey Stout 750ml
Whisky barrel aged Whey Stout 9.5% a/v Back in the year 2000 an ex-bourbon barrel was filled with new make spirit at Tasmania Distillery. Ten years later, a young man at Lark Distillery helped bottle this single malt whisky for independent bottler ‘Trapper’s Hut’. He was also commissioned to brew and distill 200 litres of single malt spirit to refill the same barrel. In 2018, Trapper’s Hut bottled this whisky and, serendipitously, the empty barrel was offered to our Head Brewer Evan Hunter. After recognising his own handwriting from 2010 on the warped heads of the dusty old cask, Evan and the brewing team filled it yet again - but this time, with Whey Stout. Only 100 of 235 corked, large format bottles are available on this Cheese Club Offer, with the remainder available exclusively through our cellar door. Brewer's Reserve Ultimate Beer and Whisky Pack 1pk

After six months of maturation, the beer was bottled at 9.5% a/v. For the first time ever in Australia - we think - you have the opportunity to experience a barrel matured beer paired with the whisky that came out of the barrel, with both products made by the same person. We have just six of these magnificent bundles available: a 750mL bottle of Brewer's Reserve Whey Stout, a 500mL bottle of Trapper's Hut whisky, a wheel of Saint, plus a guided brewery tour and beer and cheese tasting at our cellar door with Head Brewer Evan Hunter*. The bottles of stout are hand-numbered one to six (first order gets bottle #1, and so on), and are suitable to cellar for many years. Trapper's Hut LD678 displays a soft floral nose with a hint of vanilla. It is gently warming and unfolds with hints of sweetness as it rolls across the palate, with a long and balanced finish. Bottled at 46% a/v with only 106 bottles released. *Travel to and from Bruny Island not included. Tour and tasting must be booked a week in advance.

Saint 200g
In the central plateau of France there are a number of cheeses that are all named after the local Saints. Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind – not a thick carpet of single strain white mould found on more commercial cheeses. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent.

1792 200g
1792 - It was the year the French first set foot on Tasmanian soil and this very French, very pungent little cheese, matured on aromatic Huon Pine boards, celebrates what could have been. It is made in the traditional method – its pinky-orange rind the result of being regularly hand-washed in brine, encouraging the surface bacteria that give this cheese its complex flavour and aroma. Great with cider, ale or a meaty pinot.

Oen 200g
OEN (from the word oenology) is a true labour of love - a washed-rind, cow’s milk cheese, washed in Pinot Noir before being wrapped in vine leaves to be carefully matured. The vine leaves protect the cheese and create a moist surface which encourages the flavour development. When mature, OEN’s rind becomes pungent and the texture becomes soft and fudgey.

This cheese celebrates two of Italy’s most ancient of gastronomic cornerstones – cheese and cured pork. It is a simple fresh cheese wrapped in locally made Prosciutto. After baking in a hot oven for 15 minutes, serve with some good bread, a simple salad and a glass of wine. Really, when you think about it, could there be anything better than hot, crispy prosciutto and gooey, melted cheese? No, there couldn't.

What would be better than a whole wheel of Tom? These are approximately 1.2kgs in weight and have been aged for around 4 months, which I reckon is the perfect age for our small wheels of Tom. They have awesome flavour – buttery and savoury with some great developed characters. Enjoy it straight away or age it for a few more months to concentrate the flavours.
