Sinapius Close Planted Grü​ner Veltliner 750ml
We've been loving this wine lately, and I think it's a great match for the cheese. The Grüner Veltliner is handpicked and destemmed allowing a few hours of skin contact prior to pressing. The wine was naturally fermented in a 1500 litre oak foudré, where it remained on yeast lees for 10 months. Straw gold in colour, this wine displays aromas of ripe pear, white peach, citrus and white flowers. The palate is fine and textural, with layers of preserved lemon, fresh cut pineapple, and spring blossom, with beautiful line and length.

Osso Bucco 600g
Osso Bucco, as Elizabeth David tartly observes, means "bones with holes" – which is probably why it is never translated on menus! This part of the animal, the hind shank, produces a ring of meat from the shin that is deliciously tender and sweet, more so than any of the other cuts from the entire animal. It's a hard working muscle, which means it will need a long, slow cooking process. There is an ample portion of meat that surrounds a flat portion of the bone, which has succulent, rich marrow in the centre. I think the classic yellow saffron risotto is the best accompaniment to a slow cooked Osso Bucco. Perfect as we come into Winter. Two portions per pack.

Eye-Fillet 200g
As the name suggests, it is one of the tenderest cuts of meat, and the best way to serve this is rare! My suggestion is to either pan-fried this or roast in the oven. It’s a thicker piece of steak, but don’t be fooled into thinking it needs a long cooking time. Get the meat to room temperature and then cook for around 3 minutes each side; this will result in a juicy, rare, delicious steak! My favourite way to serve this is thinly sliced with roasted winter veggies. Two steaks.

Rib-Eye Fillet 450g
This steak is cut is from the front of the steer, It’s very highly marbled. Much of the rich, beefy flavour comes from the fat! It’s often said that the bone imparts a rich flavour from the marrow (while other say it doesn’t make a bit of difference to the end result because of the quick cooking method!) this could be my all time favourite cut of beef. I love to serve the steak sliced on a board, with the bones, generously covered in Salsa Verde. This is a single steak.

Scotch Fillet 450g
This is regarded by many as the most flavoursome steak cut, mainly due to the middle seam of fat marbling which significantly enhances the flavour and texture of the meat during cooking. Whether you like your steak rare, medium or well done, our scotch fillet is best cooked on the BBQ or pan-fried. Cook for around 3 mins each side for rare and 4 mins each side for medium. Personally, I stick to the classic meat and two veg, and love to serve this with sweet potato fries and steamed broccoli. Two steaks in this pack.

Porterhouse Steak 400g
This cut is prepared from the striploin, and is characterised by a lean but tender steak with a thin top strip of fat for extra flavour. Pan-fry on a high heat to seal in the delicious juices and cook for around 3 mins each side for rare and 4 mins each side for medium. This is the cut for you if you like a good steak sandwich – all you need are fresh rolls, some fried onions, rocket and mustard or tomato sauce and you’re ready to go! Two steaks per pack.

Our Wood-fired Dukkah 70g

Saint 200g
In the central plateau of France there are a number of cheeses that are all named after the local Saints. Like our Saint, they are all surface ripened, soft oozy cheeses with a light bloom on the rind – not a thick carpet of single strain white mould found on more commercial cheeses. This cheese can be eaten younger, when the inside is still firm and the flavour more delicate, or wait until the curd breaks down completely and the flavour gets more pungent.
